Bikini Recipe

Yields 10 servings

Ingredients for the Clementine Syrup (makes 750ml)

300ml fresh clementine juice
200ml newly squeezed lemon juice
500g granulated sugar

To make the Cocktail (yields 850ml, to serve 10)

400ml decent vodka
100ml classic gin
150ml peach-flavored liqueur
200ml clementine cordial (as made above)
Whole cranberries, to garnish
Mandarin essential oil, for finishing

Method

For the Syrup: Put the listed components in a pan, bring to a simmer, stirring until the sugar dissolves. After that, turn off the burner allowing it to reach room temperature entirely. Transfer into an sterilised bottle, seal and refrigerate it chilled, it will last for up to four weeks.

To make Batch Mix: Pour the specified liquid ingredients into a large bottle, leave to sit for 60 minutes, then strain best through muslin, so it's completely strained.

When ready to serve: Measure 85ml from the batch mix into your stirring glass packed with ice, and agitate gently for one minute to cool it down. Pour into a frosted cocktail glass or similar, decorate with the cranberries and complete it using a light spray of the essential oil above the glass.
